Varietal Chardonnay

The local Vins de Liqueur of the Jura is called Macvin, Valentin produces both a white and red version. Chardonnay juice and musts are macerated in marc for a month then aged for 18 months in the cellar.
A layer of freshness and licks of the marc, the balance between sugar and acidity gives tone and fullness to the wine. Beautiful with apple or fruit desserts and washed rind cheeses.
