A key aspect of the Cosmic winery is maceration. Most of Salva’s wines have some element of maceration, even just a few days. After two consecutive years of drought and high temperatures, the nutrients in the skin are deemed incredibly important. Despite the maceration, this is a wine that drinks more like a white wine with a shimmy of texture and phenolics.
A gently skinsy Xarello thats full of white tea and peach skin. A delight to drink, a bright mineral core with a touch of salinity.
