Thomas Tixier’s family have been producing wine in Chablis for many years. Until 2020 the family farmed 8 hectares of land in Courgis and produced conventional wines.
With the retirement of his parents, Thomas reduced the estate to 4.4 hectares, a portion of which is rented out to stabilize the family’s finances in the early years.
Inspired by his neighbours, Alice and Olivier De Moor, to take a new direction, Thomas introduced organic farming principles in 2021. The town of Courgis is small, and the support and guidance from the community has been instrumental. His first vintage in this new way was 2022, transforming his family’s legacy.
Consisting of two plots; Grosse Terre and Corvee, the Chardonnay vines were planted in 1970 and 1980 respectively, on Kimmeridgian limestone and marl soils.
In the cellar, Thomas takes a hands-off approach also; spontaneous fermentation, vinification without additions, and no fining or filtration. Sulphur, in small amounts, is used at bottling.
2024 was an incredibly challenging year for grape growing, Thomas lost half of his production to mildew and frost. Vinifying just 1000 litres, he produced one wine; Lacryma Vinea. I wasn’t expecting that we would be offered any wine this year, so was thrilled when Thomas advised he had allocated 60 bottles to Australia.
When visiting Thomas in November 2025, it provided the opportunity to taste the 2024 prior to bottling and the 2025 cuvees in varying vessels. Thomas Tixier is producing precise and crystalline wines with texture and elegance. Without doubt one of the most exciting producers to emerge in Chablis for some years.

Varietal Chardonnay
Colour WhiteDirectly pressed Chardonnay, rested half in used barrels and half in tank. The only wine produced in 2024, approximately 1250 bottles made.
